We wouldn’t want you to miss out on enjoying this taste powerhouse and so here is a vegetable packed recipe to help you along.  Most processed white rice has had the protein, vitamins and minerals removed, leaving a mainly carbohydrate product which is generally eaten with a protein rich food.  However, the great thing about fried rice is that it reintroduces some of the vitamins and minerals that ordinarily would not be present in rice dishes.

Ingredients

500g rice (parboiled)

150g Sweetcorn

150g Peas

1 Onion (chopped)

3 Carrots (diced)

1 Onion (diced)

1 Bell Pepper (diced)

1 teaspoon Ginger

1 teaspoon Garlic

2 tablespoons of Sesame Oil

50ml Vegetable Oil

1 litre Water

1 tablespoon of African Plate Fried Rice Spice

Salt to taste

Instructions

  1. Heat the vegetable oil in a pot.
  2. Add the ginger, garlic and onion and fry for 1 minute.
  3. Add the remaining ingredients and fry for 5 minutes.
  4. Serve with your protein of choice and fried plantain.
